Baked Oatmeal Cherry Nut Cookies

Recently (as in the past 6 months or so) I've been sort of obsessed with oatmeal cookies. I think it started when I heard that Mother's Cookies were no longer. Mother's makes my favorite oatmeal cookies, can you believe it I like plain oatmeal cookies, not oatmeal raisin, and I don't really care about the crisp-chewy factor but there's a certain butter-spice-sweet ratio that has to work for me and Mothers oatmeal cookies are my standard for judging an oatmeal cookie's flavor. Since fall is coming up so soon, I made some cranberry-pecan oatmeal cookies. I think they're the perfect way to get my mind in a fall mood. I've made these cookies as the recipe is originally written more times than I can possible count. Oatmeal Cinnamon 1- Minute Mug Cake

The idea for this particular mug cake came from a recipe I came across on the Kitchn website for an aptly named oatmeal mug cake. It was OK, but both the Husband and I thought it needed something so I went to work and added applesauce, raisins and a sprinkling of brown sugar on the top. The applesauce gave it some much needed moisture, a hint of apple-ness, and it also gave the cinnamon a true purpose in life. The brown sugar gave it sort of a caramel topping and the raisins were just because I love them, but you could leave them out. Possible applications for an oatmeal cinnamon mug cake would be a quick breakfast, a wonderful afternoon snack with your cup of tea, or a nice, light dessert in the evening. And how about mixing up the batter in the morning and taking it to work with you. Overnight Apple-Cinnamon Oatmeal

I must say that it's just ever so nice to be back. It's been a long and, at times, harrowing six weeks here in the Circle B Kitchen, and yes, I owe you a whole bunch of recipes, and I wish I could post one every day for the next two weeks to say thank you to all of you who have been so kind, thoughtful and supportive while I've been otherwise engaged in my father's recovery from 2 surgeries and weeks on end in the hospital. Blueberry Oatmeal Bars

This recipe for blueberry oatmeal bars is perfect for those harried days when you want to bake a dessert that's super delicious but doesn't require a lot of prep time. Blueberry oatmeal bars are so luscious I would be hard pressed to decide if they're better than blueberry pie. To prepare blueberry oatmeal bars, basically just first whisk the dry ingredients together, cut in the butter, mix in the egg yolks, followed by the cold water. Press about of the dough onto a baking dish reserving the rest for the topping. Arrange the blueberries in a single layer then sprinkle the rest of the dough in clumps between the blueberries. Bake at 375 F for 30 35 minutes or until it's golden brown. The fragrance at this point will be so sweet and inviting. Let it cool, then slice into bars. Check out recipe box below for details. You can bake blueberry oatmeal bars in a 9 x13 pyrex baking dish. I've also made them using an 8 x11 dish.

I only wish that I had wished for this cake a long time ago a moist, slightly dense, oatmeal-y cake with a coconut topping that provides the perfect textural counterpoint. This post started out to be about how this is the way I will always and forever want to eat my oatmeal because, well, frankly, it was just that good. But I've decided to tone that down a bit. It doesn't seem quite right to be committing oneself so completely before experiencing a substantial number of oatmeal variations. But I think I'm safe in saying that, so far, this is by far and away my fave. Secondly, it's just so dang good. I'm sure there are probably lots of you out there who have been baking your oatmeal like this since 1954, but allow me just a little joy in my discovery. Savory Oatmeal Cookies

I really wasn't sure at first that we should be calling these cookies it seems misleading and confusing and somehow kind've wrong. But they're definitely not crackers, so I guess we're left with cookies, which sort of describes their shape and texture. But their flavor, on the other hand, is something else altogether definitely savory, definitely oatmeal-y and definitely delicious. I found this recipe on The Kitchn website and was immediately intrigued. I had a hard time imagining what a savory oatmeal cookie would actually taste like, but in the end they taste like what you might expect from the ingredient list oatmeal, parmesan cheese, a bit of rosemary and sea salt, and just a hint of sweetness from the brown sugar. Oatmeal Crumble Muffins

Every now and then I get sort of crazy excited about a recipe, and this is one of those times. I know, I know, it's just a muffin, but if you're like me, and you enjoy your oatmeal in muffin form, you might just be a tad excited about this too. I came across the original recipe here on 101 Cookbooks (I love Heidi's recipes). These are easy muffins to make and I love the crumble topping. The big drawback for me was all the butter. There was close to a whole cup of butter (7 8 of a cup to be exact) in the recipe (yikes ), and I would have liked to taste the oatmeal a little more. So I decided to make these again and cut out the butter altogether. Brave, huh Well, they came out beautifully, let me tell you, and the flavors and texture brightened up immensely. I think all the butter was just weighing em down. I also added raisins cuz I love em in my oatmeal. The thing that most amazed me about these muffins was how much more I enjoyed them after cutting out all the butter.

We were watching an old episode of Good Eats the other day, and it was about oatmeal. How healthy it is, what you can do with it besides just eat it as oatmeal (bread cookies), and such. But I had forgotten about how it included one of my favorite tenets of Alton Brownism RAISINS ARE ALWAYS OPTIONAL. It seems like oatmeal cookies are often paired with raisins, for some reason.
